Norwegian Cuisine

Being 1/2 Norwegian, I do have a certain attachment to some of the cuisine of the country. I've never actually tried any of the items mentioned in the post I've linked to below, but have heard my mother mention lutefisk several times - mostly positive things were said, but I dunno! My fave is lefse - a soft flatbread made of potatoes. More on this later, but for now, check this out...
